Nasi kerabu or nasi ulam

Hi readers.

Last week I cooked nasi kerabu. My first attempt and it was so-so (the taste). This dish is quite healthy as there's a lot of veggies inside.

Here is the recipe if you wish to try it out.

Ingredients;
300g basmathi rice - washed
300ml water
1 tsp blue dye - food coloring

Ingredients for coconut floss
5 shallots
Half grated coconut - cooked in a wok without oil until light brown
Half tsp of black pepper
2 pieces of mackerel - boiled & deboned
2 stalks lemon grass - finedly sliced
Salt & sugar to taste

Ingredients for sauteed "budu"
5 shallots
1 cm ginger
2 stalks lemon grass
5 chilli padi
2 tbsp "budu"
100 ml coconut milk
1 slice of "asam gelugor"

Veggies
1 stick of cucumber
2 stalks of botor beans
4 sprigs pegaga
1 ginger flower
A handful of bean sprouts

Method
1. Find a suitable pot and cook rice. Pour in the blue dye when the rice is cooked. Stir so that blue dye spread evenly and put aside.
2. Prepare a stone mortar, mashed all the ingredient for coconut floss until blended and set aside in a bowl.
3. Next, heat the pan and add all the ingredients for sauteed budu and simmer over low heat until boiling. Remove from heat.
4. For veggies, sliced and combine all ingredients (except for bean sprouts).
5. Serve rice with coconut floss, sauteed budu, veggies, salted egg and fried fish. Mix them before you eat.

Before mixing the ingredients.

After mixing the ingredients.

Clockwise: baked beef, stuffed chilli, fried chicken & salted egg.

Enjoy your meal everyone!

Durian Oh Durian!

I have this crave for durian since I got pregnant with Anaqi. I remembered that I got to eat a hint of it.

My hubby promised to buy it later after my confinement. According to him, pregnant women are advised not to eat the fruit. Later means almost 3 years after I had delivered Anaqi.

Finally, I had a blast with durian last Friday. I took gaviscon before I ate half of the fruit. Normally I would not eat as much because it' heaty if you take it too much. But, who cares!

Thanks to my experience watching mom & dad peeling off the durian. I am able to do it on my own. Proud of myself!

Then, on Sunday I made roti jala & serawa durian for hubby.

Any durian lovers out there?
Head on to your nearest durian buffet.. 😉

I miss work, friends & family

Hey!

Yes! Sometimes I do miss going out early morning for work. I miss hanging out with friends. I miss my mom, dad, sisters & my nieces!

I got to spent some quality time with my eldest sister and my two nieces last weekend. It was awesome.

I get to present for unit trust last sunday ( though I was distracted by my son).. I wish I could explain more and better. It was not quite informative as it used to be.

I get to hang out with one of my besties at her bro's wedding. I hope that we had more time, however Anaqi was already sleepy after having nasi minyak.

Hope I could do more work, meet my family and friends in future.

Till we meet again readers!
