Nasi kerabu or nasi ulam

Hi readers.

Last week I cooked nasi kerabu. My first attempt and it was so-so (the taste). This dish is quite healthy as there's a lot of veggies inside. 

Here is the recipe if you wish to try it out.

Ingredients;
300g basmathi rice - washed 
300ml water
1 tsp blue dye - food coloring

Ingredients for coconut floss
5 shallots 
Half grated coconut - cooked in a wok without oil until light brown
Half tsp of black pepper
2 pieces of mackerel - boiled & deboned
2 stalks lemon grass - finedly sliced
Salt & sugar to taste

Ingredients for sauteed "budu"
5 shallots
1 cm ginger
2 stalks lemon grass
5 chilli padi
2 tbsp "budu"
100 ml coconut milk
1 slice of "asam gelugor"

Veggies
1 stick of cucumber
2 stalks of botor beans
4 sprigs pegaga
1 ginger flower
A handful of bean sprouts

Method
1. Find a suitable pot and cook rice. Pour in the blue dye when the rice is cooked. Stir so that blue dye spread evenly and put aside.
2. Prepare a stone mortar, mashed all the ingredient for coconut floss until blended and set aside in a bowl.
3. Next, heat the pan and add all the ingredients for sauteed budu and simmer over low heat until boiling. Remove from heat. 
4. For veggies, sliced and combine all ingredients (except for bean sprouts).
5. Serve rice with coconut floss, sauteed budu, veggies, salted egg and fried fish. Mix them before you eat.
